This is a dead simple starter that I just made for my family.
– Portobello mushrooms (1 per person)
– blue cheese (any kind will work)
– balsamic vinegar
– olive oil
Put whole Portobello mushrooms bottom side up in a roasting pan (1 per person). Put plenty olive oil in the pan, and a splash inside each of the mushrooms. Add a splash of vinegar inside each mushroom.
Pop them in a medium heat oven for a while – 20 mins or so.
Cut the cheese into small lumps.
Take the mushrooms out, sprinkle the cheese lumps into each one, and pop them back into the oven for 5 minutes (or, if you are not quite ready to eat them yet, turn the oven down to a low heat and leave them until your ready).
